On Thursday 16th SEAS THE MIND hosted a community 5k in Central London as part of Marathon for Mental Health - a flexible marathon for crew & yachting professionals to run, walk or hike while raising money for ISWAN charity.
STM Director Emma, having hung up her knives, got back in the kitchen & made some incredible protein balls that she said were always a hit when she was yacht cheffing - and man did they go down well!
Here’s the recipe for you to enjoy next time you get back in from a run or if the crew are flagging mid charter.
Coconut date balls recipe
Ingredients for about 20 servings
125 g butter
¼ cup sugar
1 teaspoon vanilla essence
¼ teaspoon cinnamon
250 g dates, chopped
1 egg, whisked
1 packet biscuits (Tennis or Marie biscuits work best), crushed
100 g coconut, for rolling
Method
1. In a small saucepan, melt the butter. Add the sugar and stir until the sugar has dissolved.
2. Add the vanilla essence, cinnamon and the dates and heat for five minutes until the dates are soft.
3. Take the mixture off the stove and transfer it to a large mixing bowl
4. Add the whisked egg and mix well.
5. Add the biscuits and coat well with the mixture.
6. Put the mixture in the fridge to cool for 20 minutes and then roll into medium-sized balls.
7. Roll in coconut and store in an airtight container, in the fridge and enjoyyyyyyyy!!
