Good Mood Food for the holidays!

Emma shares her Burnt Butter Madeleine’s recipe.

Ingredients for about 24 servings:

150g Flour

210g Sugar

110g Butter

200g Egg whites

3 tsp Maple syrup

Method:

  1. Pop all the butter into a pan, and make a Buerre Noisette

  2. While the butter cools slightly, combine flour, sugar and maple syrup in a large bowl and mix into a paste. set aside.

  3. Whip your egg whites into stiff peaks, add a pinch of salt near the end.

  4. Combine the burnt butter with the flour/ sugar paste, once combine, slowly and gently fold in the egg white into the burnt butter mixture until mixed well.

  5. Pop into a preheated oven at around 170° for 9 mins.

  7. Enjoy fresh out of the oven whilst warm, preferably with friends and plenty of whipped cream to dredge.
